Yummy Cranberry Muffins: A recipe you'll love

Today I made some yummy [and healthy] cranberry muffins that are moist, sweet and have a hint of tartness that comes with fresh cranberries. I hope you love these as much as I do. The recipe is based on this recipe http://allrecipes.com/recipe/lemon-cranberry-muffins/detail.aspx.

Cranberry Muffin Recipe:

1 cup whole wheat flour
1/2 cup white unbleached flour
1/4 cup of brown rice flour [optional could just use 3/4 cup white unbleached flour]
1/4 cup of flaxseed meal
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon clove
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1/3 cup grape-seed oil [I prefer this over any other oil]
1 cup 1% organic milk
2 eggs [cage-free]
1 1/2 cups halved fresh organic cranberries
3/4 cup [fair trade] white sugar
Walnuts optional [I sprinkled them on top of half the muffins, sprinkled sugar on top of the other half]

Combine all dry ingredients except the cranberries and sugar.

In a separate boil mix vanilla, oil, eggs and sugar. Slowly combine milk and dry ingredients into egg and sugar mixture -- do not over mix. Then slowly fold in cranberries. Fill muffin cups 3/4 way full [makes 12 muffins]. Preheat oven to 400 degrees bake for approximately 18 to 20 minutes. Leave in muffin pan for 10 minutes and then remove and enjoy!
